Carbonated Milk

I was hollering at CeePee the other day and he mentioned how you can buy carbonated milk in Korea. At first it sounded really fucked up and then I came to thinking that it’s probably pretty damn good if a company is selling it. I mean, there has to be a market for carbonated milk if the company exists, right? Well, after a couple minutes I realized that I could make some fizzy milk in the comforts of my own home using my homebrewing equipment.

So here’s my CO2 tank. I use this to serve beer from my 5-gallon soda kegs and to force carbonate beers. Whenever I brew a beer and don’t have time to wait for it to carbonate slowly I hook up the gas and shake the keg for a few minutes. With a carbonator cap I can do the same thing if I want to carbonate a smaller quantity of beer like a 2-liter bottle.

So instead of using beer with this shit I decided to try out milk. We’re not stopping there though. On the way home from work I picked up some Hawaiian Punch, orange Gatorade, Snapple Iced Tea w/Lemon and a bottle of Starbucks Mocha Frappuccino.

Brisketland

I was in Austin, TX last week for some work training and thought it would be the perfect opportunity to taste a little bit of Texas BBQ. I’ve been there once before a few years back and tried some really mediocre chili from the Texas Chili Parlor (beans wtf) but I didn’t get to try any BBQ. So this time I decided to do it up right by researching the area and taking recommendations from friends familiar with the scene.

Iron Works
We started off at Iron Works downtown. It wasn’t recommended by anyone but fuck it was only blocks from the hotel, they served Saint Arnold’s beers and we were hungry. What a waste. The brisket tasted like it was smoked and then boiled to eliminate all the good shit I was looking for (flavor, aroma and texture). I mean I didn’t even waste my time taking a picture of the plate. The smoke ring could have been sued for false advertising.

After visiting that shithole we knew there had to be better eats to be found so the next evening we headed south about 45 minutes to Lockhart, TX to sample 3 or 4 BBQ joints.

Kreuz Market
First we pulled up to Kreuz Market and the parking lot was empty. No wait, there was one car that had it’s dome light on so we pulled in and sure enough they were open. We ordered a 1/4 lb. of everything they sold and an old lady piled it on a sheet of paper (no tray) and gathered it up like a pouch for us to take to the dining room. More

Carnitas and Lengua

I love tacos. I’ve eaten them my entire life, being mexican kind of has something to do with it but man they are such a staple that I can’t imagine a life without them. Last night after happy hour I rolled through San Jose Taqueria, the underdogs of 24th and mission. Everyone loves Farolito, clueless people rave about La Taqueria (it’s the white friendly choice!) but I’ve been fucking with the pork selection at San Jose for a minute. Given the chips here suck, but really if that’s what your looking for then you need to take your ass to bullshit Taco Bell. I’ve never had their chicken or carne asada so I can’t help you with that either. But if you’re looking for some Al Pastor, Carnitas, or Lengua well then these dudes can help you out. For some reason I’ve found their al pastor to be the best before noon, it’s just a bit crunchier. Maybe because it’s slow but they crisp it up on the grill for a minute, when it’s perfect it’s so fucking good.

Last night the carnitas were so on point. They fried the shit out of them to the point that I had a pancake of fried pork on my taco, so perfect. I just got them with cheese and some salsa. The cheese grease with the salsa and crispy pork strands were ridiculous. The lengua wasn’t bad either, but it wasn’t fucking with the beauty of the carnitas. I hadn’t been to San Jose for a while but man last night they fucking blessed me. Sometimes they have issues with quality consistency, the last time I was there I got a suspect burrito with meat that had the texture of burnt straw. But I have faith and usually the food is decent/good but when they are on their game it’s awesome. Last night they made a believer out of me again.

Roasted Garlic Gravy

My wife is a vegetarian and holiday dinner’s usually suck for her. Her sister in-law isn’t the wisest and as a result she ends up with mashed potatoes, corn and shitty mushroom gravy out of a can. This year we didn’t want to visit anyone (I’m trying to get that out of my life completely) instead we stayed home and I decided to boss up with a vegetarian meal. In doing so I found a recipe for some roasted garlic gravy and tried it. I was kind of amazed at myself at how well this turned out.

take some garlic cloves, drizzle with olive oil and double wrap tightly in foil and roast at 400 for 45 minutes

put in bowl and puree

melt 5 tablespoons of butter, then take the garlic puree and 1/3 cup of flour and mix that shit. Then slowly add vegetable stock and wisk

simmer for 3 minutes.

These Sherry Vinegar and Molasses Glazed Carrots were the knock too. I thought they might be hella sweet, especially considering I used maple syrup instead of molasses but man these went hard.

I also made some wild rice stuffing and salmon over spinach. Thank god my wife eats fish.

Pasteles de Picadillo

Today I ran into an old lady at 19th and Mission selling pasteles and papusas out of her little shopping cart. I copped two pasteles for 2 bucks. These are kind of like empanadas, hell some people probably call them that. I’m not all up on my central American shit but whatever basically it’s a fried tube of awesome filled with carnitas and vegetables, sold in a sandwich bag with a handful of pickled cabbage and carrots. I’ve had these a few times at El Savodorian restaurants, they are fucking banging. Some yucatan/mayan restaurants make somethings similar, just kind of depends on who is doing the cooking. I wanted to cop some of this lady’s papusas but I didn’t have time for that shit. If you see these cop, they are tasty as fuck.
